Peanut Butter Berry Baked Oatmeal

 

It’s definitely starting to feel like fall around here! So that means it’s time for a quick and easy meal prep breakfast to keep you warm on chilly fall mornings. This baked oatmeal is super easy to throw together and is perfect for busy mornings on the go. I like to bake this on Sunday and heat it up during the week when I need a quick breakfast. Keep reading for the recipe!

Ingredients

Egg

This serves as a binder for the baked oatmeal. Alternatively, you could make a flax or chia egg if you have an egg allergy or prefer to make the dish vegan.

Milk

I’ve used a variety of milk, including non-dairy varieties, and all have worked great. I would suggest cow’s milk or unsweetened oat, almond, or coconut milk.

Peanut butter

Choose peanut butter without added sugar or oil (check the ingredient list on the label!). You can even try making your own! Feel free to try a different nut or seed butter if you’d like, such as almond or sunflower seed.

Oats

I recommend using old-fashioned rolled oats rather than quick-cooking or steel-cut. Make sure you choose gluten-free if necessary.

Berries

Use whatever berries you have on hand; I prefer blackberries and/or strawberries. Frozen berries work perfectly in this recipe, but fresh are great as well if you have them on hand. I pick berries over the summer, then freeze them so I have them on hand year-round for recipes like this!

Ground flaxseed

I like to top my baked oatmeal with ground flaxseed because it makes for a crispy topping and adds extra fiber and healthy fat.

Pecans

I love roasted pecans, so I often sprinkle a few raw pecans on top for an extra crunch. Like ground flaxseed, pecans are also a great source of fiber and healthy fat.

 

Nutrition

Having plain oatmeal for breakfast leaves me feeling hungry soon after I’ve eaten. Plus, oatmeal on its own doesn’t taste very good! Even though oatmeal is a good source of fiber and even contains some protein, it’s best to add some healthy fat and additional fiber and protein to make it a balanced and filling meal. This baked oatmeal is packed with all three, which will help you to feel satisfied until lunch!

Peanut Butter Berry Baked Oatmeal

Ingredients

  • 1 egg
  • 1 3/4 cup milk of choice
  • 1 tsp vanilla
  • 1/2 cup natural peanut butter
  • 2 cups rolled old fashioned oats
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • Dash of salt
  • 1 1/2 cups frozen berries
  • Ground flaxseed (optional)
  • Chopped pecans (optional)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit/175 degrees Celsius. Grease an 8x8 square baking dish and set it aside.
  2. In a large bowl, whisk together the milk, egg, peanut butter, and vanilla extract.
  3. To the same bowl, add the oats, baking powder, ground cinnamon, and salt. Mix well to combine.
  4. Add the frozen berries and gently stir until incorporated.
  5. Pour mixture into prepared baking dish and top with a sprinkle of ground flaxseed and chopped pecans, if using.
  6. Bake for 35-40 minutes or until the top is golden brown and oatmeal is set. Let cool for 5-10 minutes and serve warm or store in the fridge for up to 4-5 days, then reheat in the microwave when ready to serve.

Serving

This recipe will make four large or six small servings. If eating it from the fridge, just stick it in a bowl and microwave for 60-90 seconds until it is warmed through. I like to top my baked oatmeal with a dollop of plain Greek yogurt for additional protein. You can also add a splash of milk if desired.

 

There’s no need to make a fancy breakfast every morning. Doing a little meal prep on the weekends with this baked oatmeal can really pay off and save you a lot of time during the week.
