Instant Pot Wild Rice

 

I absolutely LOVE my Instant Pot. If you don’t have one, I’d highly recommend getting one! Instant Pots are great for so many reasons, including batch cooking of grains like rice. Read on if you’d like to know how to easily cook wild rice in the Instant Pot, as well as why it’s a healthy option when choosing a grain for any meal.

Nutrition and health benefits

Dry wild rice will expand to 3-4 times its original size when cooked. 1/4 cup dry wild rice contains:

  • 150 calories

  • 1/2 gram fat

  • 34 grams carbohydrate

  • 2 grams fiber

  • 5 grams protein

Wild rice contains more fiber and protein than white or even brown rice, both of which will fill you up and prevent as high of a blood sugar spike. Additionally, wild rice is gluten-free so if you have an allergy or intolerance, this is a great replacement for pasta or other gluten-containing grains.

 

Where to buy it

I like to buy wild rice in bulk. This is often cheaper and is better for the environment if you invest in some of these reusable bags. Wild rice in bulk can be found at most grocery stores and Bob’s Red Mill is a great option when looking for bulk grains.

 
 

Instant Pot Wild Rice

Ingredients

  • 2 cups wild rice
  • 2 1/2 cups water or broth

Instructions

  1. Add wild rice and water or broth to the Instant Pot and stir together.
  2. Close the lid and make sure the vent is set to "sealing". Select the "manual" setting for 15 minutes. It will take 10-15 minutes to come to pressure.
  3. Allow the pressure to release naturally - this can take 20-30 minutes.
  4. Open the lid and serve right away!
 

Storage

Store leftover wild rice in the fridge for up to five days. I like to make a larger batch and store some extra in the freezer as well. Pre-portioned containers of wild rice paired with a protein source, healthy fat, and lots of veggies make for quick and simple meal prep.
