Muffins are a go-to snack at my house. We almost always have bananas that end up overripe so adding them to muffins is an easy way to avoid having to throw out food. And because bananas are so sweet, there is no need to add any sugar. Today I’ll share my recipe for no added sugar banana muffins that I recently made for my toddler, but they are also great for adults wanting a low-sugar and filling snack.
Ingredients
These muffins contain only 8 ingredients. I kept them plain, but feel free to add chopped nuts, dried fruit, or chocolate chips if you’d like! Most of these are likely ingredients you already have in your pantry:
Whole wheat flour - using all whole wheat flour increases the protein and fiber of these muffins, but you can use half white and half whole wheat if you prefer
Baking soda
Salt
Cinnamon
Bananas - make sure these are very ripe
Eggs - use the whole egg for extra protein and healthy fat
Avocado oil - you can use unsweetened applesauce in place of the oil but this will increase the carbohydrate content and lower the healthy fat making the muffins slightly less filling (though still healthy and delicious!)
Pure vanilla extract - adds a little sweetness without any sugar!
I like using these muffin cups to make clean-up easy and to avoid using paper muffin cups that have to be thrown away.
Nutrition
This recipe makes 12 muffins and each contains:
197 calories
9 grams of unsaturated fat
24 grams of carbohydrate
3.5 grams of fiber
4 grams of protein
Most store-bought muffins will be much higher in calories and sugar than these homemade no added sugar banana muffins. The fiber and protein in these banana muffins makes them a filling snack or healthy treat.
