Tropical Overnight Oats Recipe

 

I don’t know about you, but I’m ready for some sunshine. Even if it’s not quite summer, I thought I’d share a recipe today that I first had while in Hawaii last year and recreated at home. Overnight oats are such an easy breakfast, so keep reading to find out what I like to add to overnight oats to give them a tropical spin.

 
 

Ingredients

I’ve shared several overnight oat recipes before and there are so many things to love about them other than the delicious flavor. They are easy to meal prep and make ahead of time and they are completely customizable. I often make 3-4 at a time to eat for breakfast all week! Here are the ingredients I like to add to these tropical oats but feel free to modify them as you see fit.

Oats

I’ve found old fashioned work best, but quick oats also work. I’d avoid steel-cut oats as these need more time to cook than just overnight. Make sure to choose gluten-free oats if needed as well. Oats are a good source of fiber, protein, and several vitamins and minerals.

Chia seeds

Adding chia seeds to these overnight oats will up the fiber and healthy fat content. Chia seeds gel when combined with liquid so give these overnight oats a pudding-like texture.

Unsweetened shredded coconut

It wouldn’t be a tropical meal without coconut! Be sure to choose unsweetened varieties of shredded or flaked coconut to avoid the extra sugar. Coconut is a good source of fiber but also has a lot of saturated fat, so be mindful of portion sizes.

Mango

Mango is one of my favorite fruits, but I have a hard time finding a good fresh mango here much of the year. I usually purchase frozen mango for this reason. Because you aren’t eating the overnight oats right away, adding frozen mango isn’t a problem because it will be thawed by the time you eat it! Mango contains fiber and is an excellent source of vitamin C.

Macadamia nut milk

This is optional but does add a fun tropical twist. I’ve made macadamia nut milk before or you can purchase it at many grocery stores these days. This recipe is also just as good when made with regular milk or another non-dairy milk of your choosing. Cow’s milk will add protein, whereas most non-dairy milks are pretty low in protein, so keep this in mind when choosing your milk.

Maple syrup

Finally, the last ingredient is optional. I think the overnight oats are sweet enough with the mango, but if you need a little more sweetness, try adding a bit of maple syrup.

 
 

Tropical Overnight Oats

Ingredients

  • 1/2 cup old fashioned oats (gluten-free if needed)
  • 1 tbsp chia seeds
  • 1 tbsp unsweetened shredded coconut
  • 1/2 cup cubed mango (fresh or frozen)
  • 3/4 cup macadamia milk (or sub regular or other non-dairy milk)
  • 1-2 tsp pure maple syrup (optional)

Instructions

  1. Combine all ingredients in a mason jar and stir to combine.
  2. Cover and stick in the fridge overnight or for up to 4 days.
  3. The next morning, remove from the fridge and stir. Add a splash more milk if the mixture looks too dry for your liking.
  4. Enjoy!
