Roasted Beets
Ingredients
- 6-8 medium to large whole beets
- 1-2 tbsp avocado oil
- 2-3 tsp garlic powder
- Salt & pepper to taste
Instructions
- Preheat the oven to 425 degrees F/220 degrees C.
- Wash and peel beets.
- Chop into 1-inch cubes.
- Toss in a large bowl with avocado oil (start with the lesser amount listed), garlic powder, salt, and pepper. Make sure beets are well-coated in oil, adding a bit more if needed.
- Spread beets on a baking sheet and bake for about 35 minutes. The beets should be fork-tender and not mushy.
- Serve and enjoy right away.
