My Favorite Smoothie!

Do you enjoy smoothies? Smoothies have become a regular part of my weekly meal plan, especially during the summer. They are portable and completely customizable, as well as a great way to sneak in some extra veggies!

Try one of these vegetables in your next smoothie:

  • Kale

  • Chard

  • Carrots

  • Beets 

  • Zucchini

  • Butternut or acorn squash

  • Cauliflower

If these suggestions seem too far out there, you can just start with spinach! Here’s my favorite smoothie:

 

Spinach Banana Peanut Butter Smoothie

Ingredients

  • 1 medium frozen banana
  • 1 big handful of fresh spinach (frozen also works)
  • 1-2 tbsp natural peanut butter (or your preferred nut or seed butter)
  • 2-3 tbsp hemp hearts 
  • 3/4-1 cup unsweetened milk of your choice (use more or less depending on desired consistency - I like coconut milk best!)
  • 1/2-1 cup ice (optional)

Instructions

  1. Combine all ingredients in a blender and blend until smooth.  Enjoy right away!

Other fun smoothie additions:

  • Plain Greek yogurt - adds extra protein and gives a creamier texture

  • Avocado - gives a smoother texture and adds healthy fat

  • Flax or chia seeds - adds healthy fat and fiber

  • Protein powder - look for varieties without added sugar, such as Bob’s Red Mill

  • Unsweetened cocoa powder - who doesn’t like chocolate in a smoothie??

Feel free to get creative with your smoothies! One thing that should be included is a source of protein, such as nut butter, hemp hearts, or protein powder. A smoothie that contains only fruit and milk can cause spikes in blood sugar and leave you feeling hungry soon after drinking it. 

Want to save time?

Blend your smoothie in advance and stick it in the freezer. Place it in fridge the night before you want to drink it and it will be ready to go the next morning.
